Second Quarter - Bread Project

Do one of the following for 35 pt. or both for 50 pt. (15 pt. extra credit).
#1 How does yeast effect bread?
Material
Yeast bread recipe and ingredients to make small batches of bread.
Procedure
- Make a batch of bread according to directions.
- Make second batch the same as the first except leave out the yeast. (kneading, time of rise, temperature, etc. must remain the same)
- Compare breads and answer the questions.
- Hand in completed questions and both loafs of bread on due date.
Bread Questions
- How high is the bread with yeast? ________________ cm
- How high is the bread without yeast? _______________cm
- Break both breads apart. What differences do you observe
Why are there holes in the yeast bread? ____________________________
Does the yeast effect the taste? __________________ How? ___________
Conclusion
# 2. Does mold like the light or the dark?
Material
- 2 pieces of bread
- 2 plastic sandwich bags
- 2 paper towels
Procedure
- Dampen paper towel and wring out well.
- Place towel and bread in bag.
- Do not close bag.
- Place one in a warm light area and one in a warm dark area. To keep temperature, moisture, etc. the same place on a counter top and in a near by cabinet.
- Keep the towel moist but not wet.
- Check daily for growth of mold.
- When mold covers one of the bread slices answer the following questions and in on the due date.

How many days did it take for mold to start to grow?

Is mold a consumer or producer? ________________________________
Where would you put something to store it safe from mold?
